Abstract: Currently, there is a problem of instability of the protein content in the original seeds of oil crops and products of its processing. There is a different quality of oilseeds coming to food industry enterprises according to physicochemical parameters. Therefore, it is necessary to conduct a study in terms of producing data on the dependence of the protein content in oilseeds and its processed products on the constituent parts (huskiness, weediness) and physicochemical parameters: moisture content, crude protein, crude fiber, crude ash, nitrogen-free extractive substances and the acid number of the oil in the seeds. The result of the research is aimed at improving the quality of production meal from oilseed seeds from the point of view of further increasing its effectiveness as a source of high protein feed in poultry and animal husbandry (improving and maintaining their amino acid composition and increasing protein digestibility by the animal’s body). Meal with a low fiber content (8-10%) has advantages in the production of food protein and vitamin products
